Beginning his law career in New Delhi, India, Sanjay Chaubey operated a private practice that provided services in civil litigation, corporate law, arbitration, and international law. Clients included Boeing, Gillette, Dornier, Coal India Limited, and Mysore Lamp Works, Ltd.

Moving to the United States in 1994, Sanjay Chaubey attended Pace University School of Law, where he received his LL.M. in Environmental Law. Mr. Chaubey conducted research on aspects of United States land use policy while pursuing his Master of Laws.

After receiving his LL.M., Sanjay Chaubey joined the firm of William E. Mariano & Associates in White Plains, New York. Working as an Associate, Mr. Chaubey focused on legal matters pertaining to real estate, contracts, and areas of corporate law. 

In 1997, Sanjay Chaubey accepted a position at the Prudential Insurance Company of America at its headquarters in Newark, New Jersey. While with Prudential, Mr. Chaubey worked on the Alternative Dispute Resolution project where he reviewed client claims and determined appropriate remedies and awards.

In 2000, Sanjay Chaubey opened the Law Offices of Sanjay Chaubey. For the last decade, he has grown his practice to include a team of five legal specialists serving clients in a wide range of legal proceedings. With expertise in litigation, immigration issues, and real estate, the Law Offices of Sanjay Chaubey has strong ties to the South Asian business community in New York. Mr. Chaubey also provides pro bono legal assistance to community members including the Lions Club in Flushing, New York, and the Hindu Center Temple also in Flushing. In 2010 Mr. Chaubey helped secure a settlement of $3 million for a Hindu priest held against his will in a landmark human trafficking case.

Sanjay Chaubey maintains his membership in the Supreme Court Bar Association and Delhi High Court Bar Association in India, as well as belonging to the New York Bar Association and the American Immigration Lawyers Association.
