Paul Fisichella began his hospitality management career as the owner and operator of Finnegan's, the oldest-running pub and restaurant in New York's Long Island area. He took control of the then-struggling establishment in 1993 and, over the next 10 years, drove its growth into a successful eatery with a six-figure annual revenue. He relocated to Las Vegas shortly thereafter, where he accepted a position as Assistant General Manager of Raffles Cafe at Mandalay Bay. Within one year at the MGM-owned, full-service restaurant, he had created a net profit of $1 million and earned a promotion to General Manager of Mandalay Bay's pool. In this role, Paul Fisichella ran operations for numerous events, services, and properties, including six full-service bars and a full-service restaurant. Over the next two years, he increased check averages by 23 percent while decreasing labor costs by 17 percent. He built steady, successful revenues as well, including $11 million secured over a period of four months. 

After leaving MGM in 2007, Paul Fisichella became General Manager of Stratta, an Italian restaurant operated by Wynn Resorts. There, he increased net sales by $1.6 million over two years while decreasing labor costs by 8 percent and food costs by 7 percent. He directed Stratta's successful operation until 2010 when he became General Manager as well as Managing Partner at RM Seafood.
